I have a Galaxy S7 Edge. Everytime I try to send out text with a photo, the photo shows up blurry and pixelated. When I attach a photo to the text message, it shows up clearly but once it sends, the photo is blurry to both myself and the recipient. When I try to share photos through other apps such as Whatsapp or Wechat, the photo quality is fine.

It’s because photos (and videos) sent via text are compressed. That’s why the quality will be the one to suffer if you use that medium to send pictures. It’s the same regardless of the device you use.
